

Honeydew Melon wrapped with Smoked Salmon by Foodie’s Chef Laura Brennan

It’s almost mid-September and the melons are still tasty, so make this quick ‘riff’ on melonwrapped-prosciutto. I’ve included toasted slices of ‘Everything Bagel’ and scattered ‘Everything Spice’ blend over the top.
- Yields: 4-6 appetizer servings
Ingredients
½ honeydew melon, ripe but not soft
4-6 ounces sliced smoked salmon
2 each Everything Bagels
2-3 tablespoons softened butter
garnish: 1 tablespoon Everything Spice blend or toasted sesame seeds
Directions
Preheat oven to 400 degrees
Thinly slice the bagels: Cut each bagel in half. Stand the bagel up on the cut edge and carefully cut the bagel-half into three thin slices. Use a longish serrated knife. Repeat process with the 2nd bagel. Butter each bagel slice with a bit of softened butter and toast on a sheet pan for 3-5 minutes or until crispy. Set aside to cool. You should have 12 pieces of toasted bagels. Remove the skin from a ripe (but not too soft) honeydew melon. Cut the melon in half and scoop out the seeds from both halves. I used only half the melon, wrap and refrigerate the melon you won’t be using in this recipe. Cut the half piece of melon into 4 pieces (in half and then cut each half again). Slice each piece into 1 ½” slices and wrap each piece with a slice of smoked salmon. To Serve: Line a serving dish with the toasted bagel slices and place your smoked salmon-wrapped melon on top. Scatter Everything Spice blend over the top.
